portant;word-wrap:break-word!important;">portant;word-wrap:break-word!important;">对于微生物限量,如表1所示,《冲调谷物》的微生物限量采用了n,c,m和M的三级采样方案,用多个样品定量检测结果进行综合判定。对于致病菌,《麦片》规定致病菌(沙门氏菌、志贺氏菌、金黄色葡萄球菌)不得检出。《冲调谷物》规定:致病菌限量应符合GB29921中粮食制品的规定,其中:沙门氏菌:n=5,c=0,m=0,M--;金黄色葡萄球菌:n=5,c=1,m=100CFU/g,M=1000CFU/g;志贺氏菌未作出明确规定。《冲调谷物》修改了金黄色葡萄球菌的限量要求:一方面涉及检测方法的修订,从过去的定性检测修改为定量检测;另一方面,基于风险评估,不再一刀切“零风险”,而是充分结合金黄色葡萄球菌属于一般性危害致病菌的特性以及企业实际成本控制等多方面因素最终形成。

portant;word-wrap:break-word!important;">portant;word-wrap:break-word!important;">标准适用于以莲藕为原料,或以纯藕粉为原料,配以其他食用辅料加工制成的藕淀粉制品。标准规定了藕粉的术语和定义,按照藕淀粉含量将产品分为纯藕粉和速溶藕粉(调制藕粉),并对两种藕粉冲调前后的感官要求有明确规定,另外,对藕淀粉颗粒的形态、水分、灰分、总糖、淀粉、典型藕淀粉颗粒含量、酸度均有明确规定。食品添加剂按照GB2760的规定执行。
