“Wewantedtocreateanatmospherewherethenewfamilieswantedtogowiththeirkidsand(have)notjustagreatatmospherebutalsobetterfoodandcleanerfood.”
Sotheydecidedtoofferhealthierversionsoftraditionaldinerfood,likepancakes,hamburgersandmeatloaf.Theyusedlessprocessedmaterials,likeunbleachedflour.Theyusemeatfromanimalsthatwerenottreatedwithantibioticsorhormones.
Businessslowedduringtherecession.SoChefYpevonHengstaddedmorehealthyfoodchoicestotrytobringpeopletohisdiners.
“Andwestartedpreparinghealthier,localfood,freshfood,vegan,vegetarian,givingpeoplethelifestyleandtheoptionsthattheywantnowadays.”
Themenhavepartneredwithmorethan15localfarmstosupplythemwithfood.Andtheydiscoveredthefarm-freshfoodwasgoodforbusiness.
“Ialsofeelreallythatit’smymoralobligationthatIneedtoprovideabetterproductforpeopleandwhenIdid,surprisingly,andsomehownotsurprisingly,wenoticedthat,youknow,thevolumestart(ed)comingbackandoverthelastthreeyearswehavegoneupby30%incustomercount,whichisphenomenal.”
Onawarm,sunnyday,ChefYpevonHengstpickszucchiniandyellowsquashwithfarmerChrisParker.HisfamilyfarmhasbeensellingvegetablestoSilverDinerrestaurantsforyears.
“IfwecouldgetalltherestaurantsinWashington,DCtocommittolocalproduce,itwouldbeagreatthingforourbusiness.”
