近日，北京市发出了第一张具身智能机器人食品经营许可证，这个“机器人大厨”不但能自动完成从取料、炸制到出餐的炸薯条全过程，还可以根据大数据分析客流状况，调整备货数量和工作节奏。

为适应新的形势，国家市场监管总局此前修订发布了《食品经营许可和备案管理办法》，并对通过自动设备从事食品经营活动的行为作出更具体明确的规定，已于2023年12月1日起施行。

据海淀区市场监督管理局花园路街道市场监督管理所所长段星介绍，在发证之前，主管部门评估了这套系统的生产流程、设备材料等，确保它在相应环境下可以安全稳定地完成食品制售。
段星表示：“从生到炸制，再到熟，最后出餐，每一个环节都是严格根据食品加工过程中会遇到的风险点，会受到污染的风险对其进行评估。我们发现人工智能从事炸制类这种简单的操作，其风险点是可控的。”

餐饮界将迎来智能时代
9月14日，2024北京餐饮品牌大会上发布的《2024北京餐饮业观察报告》显示，上半年，北京市餐饮业注册量达4842家，平均每天新开餐厅数量约为26.5家。尽管餐饮消费总量保持稳定，但市场迭代也在加速，要求企业必须具备更强的抗压能力和高质量运营能力。
