Centralkitchens,whicharetheplacesforfoodenterprisestocarryoutproductionandprocessing,qualitycontrolandinspection,uniformpackaging,storage,deliveryandinformationhandling,becomeanewtrendofthemodernizationtransformationofthecateringindustry,whichrelyoncentralizedprocurement,processinganddelivery.Thetwonationalstandardsareofgreatsignificanceforimprovingtheefficiencyofcatering,raisingtheuseratioofrawmaterials,reducingfoodwaste,andstrengtheningthemanagementoffoodsafety.
GB/T44142-2024specifiestherequirementsinfouraspectsincludingsiteselectionandoveralllayout,settingofprocessingzone,constructionofthemainstructure,andfacilityandequipmentofacentralkitchen,whichprovidesguidanceforthereasonableconstructionandscientificinvestment.
GB/T44141-2024providesguidancefortheoperationandmanagementofcentralkitchensintermsoffacilityandequipmentmanagement,operationandprocessing,safetyandtraceability,emergencymanagementandrecall,personnelmanagement,informationrecordandfilemanagement,aswellassupervision,evaluationandimprovement.Italsoputsforwardspecificrequirementsfortheprocurementandacceptanceofrawmaterials,operationandprocessing,inspectionandreservedsamples,storage,deliveryandotherphases.
Thetwostandardswillfurtherimprovetheintensiveoperationcapabilityofthecateringindustry,cultivatethenewmodeof“breedingbases+centralkitchens+cateringstores”,andcontributetothehigh-qualitydevelopmentofrelevantindustries.
